Back again!

I'm back again! Last year was terribly stressful, now it seems it's going all better. I found the job I was looking for since when I finished high school. But I have to wait for the quarantine then I will start the new job.

For now, I will appreciate these forced vacations and I will use this opportunity for giving vent to my passions. Yesterday was the day of cooking. For lunch, we prepared (me and my boyfriend) hot dogs with bratwurst and onion rings and we really loved them.
Later in the afternoon, I baked a triptyque cheesecake. I found the recipe in a book I bought many years ago and I decided to bake it for reaching my biggest goal: to leave my old stressful job. It has been a difficult goal for me, but I was able to reach it thanks also to a big rate of luke. So, I have to celebrate it! I ate the cheesecake this morning for breakfast and I really loved it.

Cooking box

Hello readers!
This week have been very very buisy for me. At work a lot of coworkers are missing for vacation (here in Italy we are used to have vacation in August) and who has no vacation (like me) have to work more for cover the missing ones.

Despite my binding and special work, I found a bit of time for cook something good. Cooking is an activity that relax me. I love cooking and I usually don't use recipes because they are too "rigorous". The first dish I show you is a dish of Ramen with chiken and vegetables (onions, carrots and cabbage). I make it dry too much, but it was good.
Then something of the italian tradition: eggplant parmigiana. Eggplant parmigiana is a sort of lasagne with slices of eggplants instead of slices of pasta and a lot of parmesan cheese. It was the first time I cooked it and I've been satisfaied. Maybe I put a little too tomatoe sauce, but my father really loved it and this was enough for me.

During this week eggplants have been protagonists in my dishes. My parents cultivate them in our vegetable gardens and the eggplants this summer are a lot. So I wanted try a new recipe with this nice vegetable. I cut them in slices and then rolled in breadcrumbs, and finally I cooked the in a pan with a little bit of oil. It was the first time my father ate them in that way and he loved them so much that he asked me to cook them again.

Pasta with Salami Pasta

Good sunday readers! How are you?

This morning I was so dynamic that I decided to cook something very, very good for lunch.  I opened the fridge and, there, right there, at the forefront of one of the shelfs, in front of my eyes, I have found a little pack of salami pasta. So, why don't cook a good sauce for pasta? And I did it! I wanted use potatoes dumplings, but I did not have potatoes at home, so I used penne. 
The recipe is very simple:
1- I prepared some sautéed vegetables with onions, carrots and slice of squashed garlic.
2- I added the salami pasta, the tomato passata and a bit of BBQ sauce and let it boil.
3- I cooked the pasta.
4- Finally, I mixed all together and served after it cooled a little.
And this is the result!

Implementing what learnt

Last Saturday evening my parents went to a dinner with friends and I decide to invite my boyfriend for a tranquil and funny dinner only him and me. It wasn't a romantic dinner because I'm not so romantic, but given that I'm warking to Mc Donald' since 4 monthes, I prepared his favourite Mc Donald's sandwich: Crispy Mc Bacon. It absolutely wasn't the same thing, but I customised it. I used pink sauce, fresh bacon, scamorza (a kind of italin cheese) and a large hamburger. For my sandwich I used ketchup, iceberg salad, tomatoes scamorza and hamburger. This was the main dish, but before it I cooked a bit of nuggets and for dessert I prepared a delicious panna cotta with caramel. Diego was enthusiastic, especially for the bacon.


After the dinner we met with my sister and her partner listening ti the cincert of him. He's a bass player and in the weekend he usually play with his band in pubs.

Baking cheesecakes

Hi lovelies!
During my last weeks I have been buisy baking two different kind of cheesecakes.
For the first one I "stole" the receipe from the blog of my friend Martina. I love her cheesecakes, but she in actually in Ireland so I decided to bake one of them using her receips. I modify a bit the original because Martina used blueberry jam, but I don't like it, so I use da special lemon cream. Wanderful! My father really loved it and also my oldest sister, his houseband and my nieces. But my mother could not eat it because she has a lots of intollerances. So I tried to bake it again without dairy products and without whites, the two worst products for me mom. I replaced ricotta cheese with goat ricotta cheese and mascarpone with rice cream cheese. Finally, I replaced the whites with rice milk and corn flour. My mother loved it and now she would eat it everyday! I ate a slice of it and it was really good. Next time I will try to bake it also for my friend Martina who is allergic to dairy products, included goat milk. I have already found a possible solution and my mother has already offered herself to act for me as a guinea-pig.

I don't have a picture of my mother's cheesecake, because it was ate before I could take a picture of it, but I have a picture of a slice of classical cheesecake.
Here the ingredients of my mother's cheesecake:

For the base:
270gr of dry biscuit
130gr margarine

For the cream:
250gr rice cream cheese
250gr goat ricotta cheese
120gr sugar
3 egg yolks
3 table spoons of flour
1 cup of rice milk
2 teaspoons of corn flour

Chop up the bicuits and mix them with the molten margarine. Spread the base in a cake pan and put it in the fridge.
Mix the yolks with the sugar, add the goat ricotta cheese, the rice cheese and the flour.
Mix up the corn flour with the milk and add to the cream.
Spread the cream on the base and bake it at 180/200° for 30 minutes.
Serve cold.

P.S. I have covered this cheesecake with chocolate cream, but you can put also fruit jams or other creams. My favourite has fresh strowberries, strowberry syrup and a bit of confectioners' sugar...yummie!

A Special Week

Hello darlings! How are you? How is the the weather like there? Here sould be summer, but it seems to be autumn.

Fortunately, last week was hot and sunny, and it was also a special week for me ^_^
First of all, the 10th of June was the day of my birthday. Accordint to my parents and boyfriend, we dwcided to not have any special party, only a quiet dinner with my sister, boyfrind and parents. We ate pizza and a chocholate cheesecake, I made the day before, all together.

Some friends of mine, greedy friends and lover of my cakes, suggested to meet all together and have a little party playing our RPG. I accepted so, de day after my birthday, I prepared another cake, a wonderful chocholate cake (yes, I'm a lover of chocholate) and...I can't show you it because I didn't have the time to take a picture of it...my friends devoured it befor I could take the picture.

But the weekend was the best part of the week. On Saturday and Sunday there was a feir of comix and cosplay and games in Villafranca Veronese. My borfriend and some other guys are part of the organization of an event in Schio and they had to go to the fair sponsorizing their event. I went with them and I staied to the stand with them all the day of Saturday.
On Saturday there was a lot of other people who could stay at the stand, so my boyfriend and I decided to have a look to the other stands. It wasn't a big fair, but there were a lot of stands, more than last year: some of theme were dedicated to board games and videogames, some to model collecting, other to comix and so on. I was attracted by two particular stands: the first one was dedicated to the fiction "Doctor Who" and it has a big Dalek in fron of the stand; while the second one was dedicated to the films of Hunger Games, Shaowhunter and Harry Potter. There was a lot of gadgets inspired by those fims and as a good fan of Harry Potter (I'm still waiting the letter from Hogwarts), I could not ignore two necklace that was calling me with strong voice: the symbol of deadly hollows and the time turner of Hermione. In the same stand I have found also a necklace with a celtic symbol that I was searching since last year.

Illness, Weekend and...Baking


Last Friday I was illed. Nothing special, only a strong cold, cought and a bit of fever.
In the moarning I went to my usual hour of postural tone Ggym and for all the rest of the day I stayed insiede, crouched down on the sofa, watching TV, drowsing and chatting with my mother. I wasn't so bad, but I was really depressed because I realized that the day after I couldn't have been to Bassano, for the comix fair. My friend, my boyfriend and I decided to go there all together, but I caughtthat awful cold, so I didn't went with them.
Saturday moarning I woke up very early and so angry. My boyfriend Diego sayed me that he might have come to visit me in the evening, after the fair, so I started to be less angry, then I had a wanderful idea! I decided to bake something for the arrive of my boyfriend.
Since the start of the week I was projecting to bake a cheesecake, I was only waiting for a special occasion. And so, it arrived. I got up heppier and made a list of what I needed for the cheesecake and I gave it to my mother who was going shopping with my father. They came back home with all the ingrdients and I started to bake my lemon cheesecake. I finished to do it early in the afternoon and I thought to read a book, but I was interrupted by a message from my boyfriend who was proposing me to meet all together in my basement room and play with a new board game. They arrived at mid-afternoon, and we played and chatted untill eight o'cloack pm. Diego brought back our friends and then came back for dinner. We ate a simple pasta and my cheesecake. It wasn't so bad but I descuvered that the day after was better.
Ingredients for the base:
350gr of dry bisquits
125gr margarine
a dit of sugar

Ingredients for the cream:
125gr mascarpone cheese
200gr philadelphia cheese
125gr ricotta
250gr whipped cream

Ingredients fort the lemon jelly:
2 lemons
200gr sugar
2 egg yolks
40gr potato starch

I have to say that illness couldnt be so bad whene there is only a cold and I have to say thank you to my friend Martina (Sweetie Tulip) that gave me a fantastic book as Christmas present where I read that for all negative things you should bake something and positive things will come back again quickly.

Strange ideas for...food

Hello to everybody!

This week was very interesting, especially about my strange ideas about food. I like cooking, and sometimes I like experimenting something new (for me, naturally). Unfortunatly I didn't studied at a catering institute, but I am luky because I am not (so much) afraid of tasting new things.

The two plates I adored most were: spaghetti with zucchinis, tomatoes and rice double cream and my special fish soup.

For the first one I used only the above mentioned ingredients with a teaspoon of sugar correcting the sour flavour of tomatoes.
The second one doesn't have only ingredients, but has also a nice story. On friday moarning my mother put out of the freezer a box of frozen fish saying me to cook it only with a spoon of oil and seasoning at my choice. At 12.00 I moved from my room to the kitchen and I deeply observed the fish's box and thought depressed "Only oil and seasoning?". I opened the fridge and saw zucchinis and carrots, so I called my mother by cellular and asked her if she agreed with my idea and she gave me the go-ahead. Well, this is what I cooked finally.
I really loved it *-* too bad it finished so quickly.
